LEAD: The Ford Motor Company said its Chicago assembly plant would end production of 1989-model Taurus and Sable cars on Sept. 1, a week earlier than planned, because orders from its dealers had dropped. LEAD: The International Business Machines Corporation said its scientists had demonstrated new chips that are able to transmit and receive data over fiber-optic lines at speeds of a billion bits a second. The new optoelectronic chips are 50 times denser than earlier components. The new I.B.M. parts are fingernail-size devices that contain 8,000 transistors.

Although analysts discounted the speculation, they acknowledged that K Mart was vulnerable to a takeover. LEAD: The assets of the nation's 463 money market mutual funds increased by $2.68 billion, to $343.22 billion, in the week ended Wednesday, the Investment Company Institute said yesterday. Those of the 141 institutional funds increased by $51 million, to $85.58 billion. The assets of the 227 general-purpose funds rose $1.04 billion, to $109.78 billion.
