LEAD: The Ford Motor Company said its Chicago assembly plant would end production of 1989-model Taurus and Sable cars on Sept. 1, a week earlier than planned, because orders from its dealers had dropped. The company said the 2,500 employees there would return to work on Sept. 11, the first day of production of the 1990 models.

LEAD: The International Business Machines Corporation said its scientists had demonstrated new chips that are able to transmit and receive data over fiber-optic lines at speeds of a billion bits a second. The new optoelectronic chips are 50 times denser than earlier components. The new I.B.M. parts are fingernail-size devices that contain 8,000 transistors.

LEAD: The Policy Management Systems Corporation said the International Business Machines Corporation had acquired a 19.8 percent stake in the company for $116.8 million. Policy Management said that under an agreement signed July 26, I.B.M. had bought 3.7 million newly issued shares of voting convertible preferred stock.

LEAD: Shares of the K Mart Corporation rose $2.375, to $43.875, on market rumors that it might be taken over or restructured, traders said. Although analysts discounted the speculation, they acknowledged that K Mart was vulnerable to a takeover. ''Bigger companies have been taken over,'' said Monroe Greenstein, an analyst with Bear, Stearns & Company.

LEAD: The assets of the nation's 463 money market mutual funds increased by $2.68 billion, to $343.22 billion, in the week ended Wednesday, the Investment Company Institute said yesterday. Those of the 141 institutional funds increased by $51 million, to $85.58 billion. The assets of the 227 general-purpose funds rose $1.04 billion, to $109.78 billion.
